Savory Steel Cut Oats With Vidalia Onions and Sun Dried Tomatoes

Ingredients:

  • One Vidalia Onion
  • 8 sun dried tomato halves
  • pinch of salt
  • pinch of pepper
  • half teaspoon of paprika
  • 2 cups water
  • half a cup of steel cut oats
  • a small pot with a lid
  • about 40 minutes

Dice one vidalia onion.

Stack and slice sun dried tomatoes.

Put two cups of water, onions and tomatoes into a small pot with a cover.

Add salt, pepper and 1/2 a teaspoon of paprika.

Bring to a boil.

Add half a cup of steel cut oats.

Cover the pot, turn the stove down to its lowest setting, and set a timer for 30 minutes.

And your oats are ready to eat!  (If you want to cross the streams with shakshuka, try cracking in an egg with five minutes to go!)
